Ingredients
Vegetable oil/light olive oil, for cooking
1/2 onion, finely chopped
1 clove garlic, crushed
1/2 carrot, grated
250g minced beef
50g mushrooms, sliced
400g chopped tomatoes
1 tbsp. tomato puree
1/2 tbsp. Worcestershire sauce
1 tsp. Italian herb seasoning
100g spaghetti
Method
Heat the oil in a deep frying pan over a medium-high heat and add the onion along with a pinch of salt and fry for 6-8 minutes until soft. Add the garlic and carrot and fry for a few minutes more.
Turn the heat to high and add the minced beef and fry, stirring occasionally for 7-8 minutes, ensuring the mince is broken up and browned all over. Add the mushrooms and cook until starting to soften.
Add the chopped tomatoes, tomato puree, Worcestershire sauce and Italian herb seasoning and bring to the boil. Simmer over a low heat, uncovered for 20-30 minutes.
Cook the spaghetti according to packet instructions. Check the Bolognese for seasoning. Serve, with a little Parmesan if you fancy.
