Ingredients

  • light olive oil/vegetable oil

  • 250g turkey mince

  • 1 onion, finely chopped

  • 2 cloves garlic, crushed/2 tsp. garlic paste

  • 3cm ginger, grated/2 tsp. ginger paste

  • 1/2 tsp. chilli flakes

  • 1 tsp. ground cumin

  • 1 tsp. ground coriander

  • 1/2 tsp. ground turmeric

  • 1 chicken stock cube

  • 150g frozen peas

  • small handful coriander, chopped

  • 1/2 lemon, juiced

  • Rice, naan or rotis to serve


Method

  1. Heat a drizzle of oil in a frying pan over a high heat and cook the turkey mince for 5 minutes.

  2. Reduce the heat slightly and add the onion along with a pinch of salt. Cook for 5 minutes.

  3. Add the garlic, ginger, chilli flakes and cook for 5 minutes, until the onion has softened.

  4. Add the ground cumin, ground coriander, and ground turmeric and cook for 2 minutes, then sprinkle over the stock cube and add 400ml boiling water. Simmer for 20 minutes.

  5. Add the peas, cook for 5 minutes to warm through and then stir through the coriander, lemon juice and check for seasoning.
