Ingredients
light olive oil/vegetable oil
250g turkey mince
1 onion, finely chopped
2 cloves garlic, crushed/2 tsp. garlic paste
3cm ginger, grated/2 tsp. ginger paste
1/2 tsp. chilli flakes
1 tsp. ground cumin
1 tsp. ground coriander
1/2 tsp. ground turmeric
1 chicken stock cube
150g frozen peas
small handful coriander, chopped
1/2 lemon, juiced
Rice, naan or rotis to serve
Method
Heat a drizzle of oil in a frying pan over a high heat and cook the turkey mince for 5 minutes.
Reduce the heat slightly and add the onion along with a pinch of salt. Cook for 5 minutes.
Add the garlic, ginger, chilli flakes and cook for 5 minutes, until the onion has softened.
Add the ground cumin, ground coriander, and ground turmeric and cook for 2 minutes, then sprinkle over the stock cube and add 400ml boiling water. Simmer for 20 minutes.
Add the peas, cook for 5 minutes to warm through and then stir through the coriander, lemon juice and check for seasoning.
