Turkey chilli noodles

Ingredients

  • 1 tbsp. sesame oil

  • 250g turkey mince

  • 3cm ginger, grated/2 tsp. ginger paste

  • 2 cloves garlic, crushed/2 tsp. garlic paste

  • 1.5 tbsp. honey

  • 1.5 tbsp. soy sauce

  • 2 tsp. Sriracha

  • 175g dried noodles

  • 1 lime, juiced

  • 1 carrot, peeled and cut into matchsticks

  • 2 spring onions, shredded

  • handful coriander, chopped

Method

  1. Place half the sesame oil in a frying pan over a high heat. Add the turkey mince and fry for 10 minutes until golden brown.

  2. Add the ginger and garlic and stir fry for 1 minutes, then add the honey, soy sauce and Sriracha and cook for a further 2 minutes.

  3. Meanwhile, cook the noodles according to packet instructions. Drain and toss with the remaining sesame oil and lime juice.

  4. To serve, divide the dressed noodles between bowl, top with the crispy turkey mince, carrot, spring onion and coriander.
