Ingredients
light olive oil/vegetable oil
1 onion, finely chopped
2 cloves garlic, crushed
1 red pepper, diced
250g turkey mince
1/2 tsp. chilli flakes
1 tsp. ground cumin
1/2 tsp. dried oregano
salt & pepper
400g chopped tomatoes
150ml chicken stock
400ml black beans
200g sweetcorn
Cheese, avocado, tortilla chips and soured cream to serve
Method
Heat a drizzle of oil in a frying pan over a medium heat. Add the onion and fry for several minutes until starting to soften. Add the garlic and pepper and cook for a further 5 minutes.
Add the turkey mince and fry until cooked through. Stir through the chilli flakes, ground cumin, dried oregano and season generously.
Add the chopped tomatoes, chicken stock, black beans and sweetcorn and bring to the boil. Simmer for 30 minutes, until the chilli thickens. Check for seasoning and serve.
