Tikka paneer & pepper wraps

Ingredients

  • 225g (1 block) paneer, cut into 12 cubes

  • 1.5 peppers, deseeded & roughly chopped

  • 1 tbsp. vegetable oil/light olive oil

  • 1.5 tbsp tikka masala curry paste

  • 2 tbsp. Greek yoghurt

  • small handful mint, torn

  • 1/4 cucumber, grated

  • 1 clove garlic, grated

  • Salt & pepper

  • 4 chapatis/rotis/wraps

  • Mango chutney, to serve

Method

  1. Combine the paneer, peppers, oil and curry paste in a bowl.

  2. Place a frying pan over a high heat and add the paneer and pepper mix.

  3. Spread out and fry for 5 minutes, turning occasionally so crisp on all sides.

  4. While the paneer and peppers are cooking, make the raita. Combine the yoghurt, mint, cucumber and garlic in a bowl and season with salt and pepper.

  5. To serve, warm the chapatis/rotis/wraps in the microwave. Spoon some of the paneer and pepper mix onto each chapati/roti and top with a spoonful of raita and a drizzle of mango chutney. Top with a few fresh mint leaves.
