Ingredients
225g (1 block) paneer, cut into 12 cubes
1.5 peppers, deseeded & roughly chopped
1 tbsp. vegetable oil/light olive oil
1.5 tbsp tikka masala curry paste
2 tbsp. Greek yoghurt
small handful mint, torn
1/4 cucumber, grated
1 clove garlic, grated
Salt & pepper
4 chapatis/rotis/wraps
Mango chutney, to serve
Method
Combine the paneer, peppers, oil and curry paste in a bowl.
Place a frying pan over a high heat and add the paneer and pepper mix.
Spread out and fry for 5 minutes, turning occasionally so crisp on all sides.
While the paneer and peppers are cooking, make the raita. Combine the yoghurt, mint, cucumber and garlic in a bowl and season with salt and pepper.
To serve, warm the chapatis/rotis/wraps in the microwave. Spoon some of the paneer and pepper mix onto each chapati/roti and top with a spoonful of raita and a drizzle of mango chutney. Top with a few fresh mint leaves.
