Sweet & sticky South African chicken

Notes

Mrs. Ball's chutney is found in every South African kitchen. This dish uses mango chutney, instead of Mrs. Ball's which is apricot-based, but it is still reminiscent of this fruity sweet kitchen staple.

Ingredients

  • 1 tsp. vegetable oil/light olive oil

  • 1/2 onion, finely chopped

  • 1 clove garlic, crushed

  • 1/2 tsp. chilli flakes

  • 3 tbsp. mango chutney

  • 3 tbsp. mayonnaise

  • 4 whole chicken thighs

  • Salt & pepper, to season

  • Green salad, to serve

Method

  1. Preheat the oven to 180°C fan/200°C/gas mark 6.

  2. Heat the oil in a small frying pan over a medium heat.

  3. Add the onion and fry for around 5-10 minutes, until soft. Add the garlic and chilli flakes, and fry for a further minute.

  4. Take off the heat, and add the mango chutney, mayonnaise and Worcestershire sauce. Season to taste.

  5. Place the chicken thighs on a foil covered baking tray (this will make the washing up much easier!), and top with the mango chutney mixture.

  6. Roast for 45 minutes.

  7. Serve with a green salad.
