Spanish chicken, potato and pepper salad

Ingredients

  • 150g Jersey Royals/new potatoes, halved

  • 1/2 onion, thinly sliced

  • 1/2 tsp. smoked paprika

  • 25g raisins

  • 1 tsp. honey

  • 1 tbsp. red wine vinegar

  • 2 roasted red pepper, cut into strips

  • 2 cooked chicken breasts, shredded

  • 1 tbsp. pine nuts

  • 2 handfuls rocket

Method

  1. Boil the potatoes in salted water for around 10 minutes, until tender. Drain and steam dry.

  2. Combine the chicken, potatoes, pine nuts and rocket in a large bowl.

  3. Heat a drizzle of oil in a small frying pan and add the onion and the smoked paprika. Once golden, add the raisins, honey, vinegar and roasted peppers. Bring to a bubble, cook for a minute, then use to dress the chicken & potato mix. Toss everuthing together, season and serve.
