Sausage meatballs

Notes

The easiest meatballs you will ever make, and loved by all the family!

Ingredients

  • 4 sausages

  • 1/2 tbsp. light olive oil

  • 1 red onion, finely chopped

  • 1 garlic clove, crushed/1 tsp. garlic paste

  • 400g chopped tomatoes/passata

  • 1 tsp. tomato puree

  • 1 tsp. dried oregano

  • 1/2 tsp. chilli flakes (optional)

  • 1/2 tsp. sugar

  • small handful of basil (if you have it to hand)


To serve:

  • pasta/bread/rice

  • a grating of Parmesan

Method

  1. To make your meatballs, make an incision along the length of each sausages, and remove the skins. Separate each sausage into three, and roll each piece into a ball, around the size of a cherry tomato.

  2. Heat the oil in a frying pan with deep sides, and add the sausage meatballs. Fry, tossing regularly, until brown. Using a slotted spoon, remove from the pan and set aside.

  3. Add your red onion to the pan, with a pinch of salt, and fry until starting to soften.

  4. Add the garlic, and stir until becoming aromatic.

  5. Add the chopped tomatoes/passata, tomato puree, red wine vinegar, dried oregano, chilli flakes and sugar. Bring to a boil and then simmer for 10 minutes.

  6. Return your meatballs to the sauce, and cook gently for 10 minutes to ensure the meatballs are cooked through. This would be a good point to get your pasta or rice on.

  7. Taste for seasoning, adding salt, pepper, sugar or vinegar if necessary.

  8. Serve with some freshly torn basil if you have it, and some cheese if you fancy.3030
