Sausage & pesto pizza

Ingredients

  • 3 sausages

  • 2 tsp. light olive oil/vegetable oil

  • 2 individual pizza bases/1 large pizza base

  • 40g fresh basil pesto

  • 125g buffalo mozzarella

  • 60g cherry tomatoes, halved

Method

  1. Preheat the oven to its hottest temperature.

  2. Squeeze the sausage meat from the sausage casings.

  3. Heat the oil in a frying pan over a high heat, add the sausage meat, breaking it up with a spoon and fry until brown and cooked through.

  4. Place the pizza base(s) onto a baking sheet. Divide the cooked sausage meat between each base, drizzle 1 tbsp. pesto over each base and scatter with the cherry tomatoes and torn mozzarella.

  5. Bake for 10 minutes, until the bases are crisp and golden and the mozzarella is melting.

  6. Drizzle with the remaining pesto to serve.
