Ingredients
150g dried pasta
Drizzle olive oil
1/2 red onion, finely sliced
1 clove garlic, finely slices
2 sausages, cut into bitesize pieces
2 tsp. wholegrain mustard
75g frozen spinach, defrosted
2 tbsp. creme fraiche
1/2 lemon, zested
Parmesan, grated, to top
Method
Bring a large pan of salted water to the boil, add the pasta and cook for 9-10 minutes, or until al dente.
Heat a drizzle of oil in a frying pan over a medium heat and add the onion. Fry for 5 minutes until soft and add the garlic and sausages for 2 minutes.
Add the mustard and spinach and cook for several minutes, before stirring through the creme fraiche.
Stir the lemon zest into the sauce then add the pasta and some reserved pasta water to loosen slightly. Season to taste and serve, topped with a little Parmesan if you fancy.
