Ingredients

  • 2 chicken breasts

  • 1 tbsp. olive oil

  • 1 lemon, zested

  • 1 tsp. ras el hanout

  • Sea salt flakes & black pepper

  • New potatoes & green veg to serve

Method

  1. Preheat the oven to 200°C fan/220°C/gas mark 7.

  2. Take a sheet of baking paper big enough to enclose your chicken breasts and form a parcel, and place the chicken breasts on one half.

  3. Coat the chicken with the remaining ingredients.

  4. Place one edge of the baking paper over the chicken breasts to enclose them, and crimo closed tightly so sealed.

  5. Place on a baking tray and bake for 15 minutes until cooked through. Rest for 5 minutes before cutting over the paper and serving with boiled new potatoes & green veg.
