Quick sausage & bean casserole

This delicious sausage stew is warming, tasty and packed with nutrition.

Ingredients

  • 1 tbsp. light olive oil/vegetable oil

  • 4 Toulouse sausages

  • Few sprigs thyme

  • 2 cloves garlic, sliced

  • 400g tin mixed beans, drained and rinsed

  • 400g chopped tomatoes

  • Salt & pepper

  • Crusty bread to serve

Method

  1. Heat the oil in a large frying pan and add the sausages, garlic and thyme. Fry for a few minutes until the sausages are golden brown.

  2. Add the mixed beans and chopped tomatoes with a pinch of salt, and simmer for 12-15 minutes.

  3. Add a grind or two of black pepper, and check for seasoning - if the sauce is a little sharp, some sugar will help.

  4. Serve with some crusty bread on the side.
