Notes
This delicious sausage stew is warming, tasty and packed with nutrition.
Ingredients
1 tbsp. light olive oil/vegetable oil
4 Toulouse sausages
Few sprigs thyme
2 cloves garlic, sliced
400g tin mixed beans, drained and rinsed
400g chopped tomatoes
Salt & pepper
Crusty bread to serve
Method
Heat the oil in a large frying pan and add the sausages, garlic and thyme. Fry for a few minutes until the sausages are golden brown.
Add the mixed beans and chopped tomatoes with a pinch of salt, and simmer for 12-15 minutes.
Add a grind or two of black pepper, and check for seasoning - if the sauce is a little sharp, some sugar will help.
Serve with some crusty bread on the side.
