Ingredients

  • Light olive oil/vegetable oil

  • 1 shallot, finely sliced

  • 2 cloves garlic, sliced

  • pinch chilli flakes

  • 1 tsp. caster sugar

  • 2 tbsp. light soy sauce

  • 1 tbsp. fish sauce

  • 1 tbsp. oyster sauce

  • 250g chicken mince

  • Small handful basil

  • Basmati rice to serve

Method

  1. Combine the soy sauce, fish sauce and oyster sauce in a small bowl and set aside.

  2. Heat a drizzle of oil in a wok or frying pan over a high heat.

  3. Add the shallot, garlic, chilli flakes and sugar and stir fry for a minute or two until fragrant.

  4. Add the chicken mince and fry, stirring and breaking up with a wooden spoon. After a few minutes, once the chicken is cooked through, add the sauce mixture and stir fry for 30 seconds - 1 minute.

  5. Remove from the heat and stir through the basil.

  6. Serve with rice on the side, and some fresh basil on top.
