Ingredients
Light olive oil/vegetable oil
1 shallot, finely sliced
2 cloves garlic, sliced
pinch chilli flakes
1 tsp. caster sugar
2 tbsp. light soy sauce
1 tbsp. fish sauce
1 tbsp. oyster sauce
250g chicken mince
Small handful basil
Basmati rice to serve
Method
Combine the soy sauce, fish sauce and oyster sauce in a small bowl and set aside.
Heat a drizzle of oil in a wok or frying pan over a high heat.
Add the shallot, garlic, chilli flakes and sugar and stir fry for a minute or two until fragrant.
Add the chicken mince and fry, stirring and breaking up with a wooden spoon. After a few minutes, once the chicken is cooked through, add the sauce mixture and stir fry for 30 seconds - 1 minute.
Remove from the heat and stir through the basil.
Serve with rice on the side, and some fresh basil on top.
