Ingredients
250g turkey mince
2cm/1 tsp. ginger, minced
1 clove/1 tsp. garlic, crushed
1 tsp. smoked paprika
1/2 tsp. chilli flakes
1 tsp. ground coriander
Drizzle light olive oil/vegetable oil
4 tbsp. mayonnaise
1/2 lemon, juiced
1 tsp. mild curry powder
1/4 white cabbage, shredded
1/2 red onion, thinly sliced
1/2 carrot, grated
2 tbsp. sultanas
Method
In a bowl combine the turkey mince, ginger, garlic, smoked paprika, chilli flakes and ground coriander in a bowl. Season well. Form into two burgers and chill while you make the slaw.
Combine the mayonnaise, lemon juice, curry powder and season. Mix in the cabbage, red onion, grated carrot and sultanas.
Heat a drizzle of oil over a medium heat in a frying pan. Add the burgers and fry for 5 minutes on each side until caramelised and cooked through.
Serve alongside the slaw.
