Ingredients
1/2 red onion, finely sliced
2 tbsp. red wine vinegar
pinch sugar
100g orzo
1 tbsp. extra virgin olive oil
2 roasted red peppers, chopped
12 black olives, halved
1/2 pack chargrilled artichoke hearts
6 sunblush tomatoes, chopped
Handful of basil, torn
Method
Mix the red onion with the vinegar and sugar, and set aside.
Cook the orzo according to packet instructions, drain and cool.
In a large bowl, combine the drained orzo, the vegetables, the red onion and vinegar, olive oil and seasoning.
Top with fresh basil and serve.
