Ingredients
150g Greek yoghurt
1 tbsp. rosemary leaves, finely chopped
1 tbsp. mint sauce
Salt & pepper
2 chicken breasts, cut into 10-12 bitesize pieces
6 medium button mushrooms
1 red onion, cut into 6 wedges
Rice and green salad to serve
Method
Combine the Greek yoghurt, rosemary, mint sauce and season with salt & pepper. Add the chicken to the mixture and thoroughly coat.
Thread the chicken onto two skewers (if using wooden skewers, soak in water for at least 30 mins), alternating with mushrooms or red onion wedges.
Cook the chicken skewers either on a griddle pan or under a hot grill for around 10 minutes, turning occasionally.
Serve with rice and a lightly dressed green salad on the side.
