Notes
This traybake contains all the wonderful flavours of Italy.
Ingredients
4 whole chicken thighs, skin removed
300g cherry tomatoes
15g black olives
1 garlic clove, sliced
1 tsp. dried oregano
1 tbsp. extra virgin olive oil
4 slices salami
1 red onion, cut into wedges
1 ball buffalo mozzarella
Salt & pepper
Small handful basil, torn
Green salad, to serve
Method
Preheat the oven to 180°C fan/200°C/gas mark 6.
Place the chicken thighs in an ovenproof dish, and season with salt & pepper.
In a large bowl, combine the cherry tomatoes, olives, garlic, dried oregano and extra virgin olive oil. Tip over the chicken, followed by the salami (a slice over each chicken thigh), the onion wedges and the mozzarella, torn.
Bake for 35-40 minutes, until the chicken is cooked through, the onions are charred and the cheese is bubbling away.
Serve topped with torn basil leaves, a drizzle of extra virgin olive oil and a salad on the side.
