Lemon, butter bean and olive chicken traybake

Ingredients

  • 1 lemon, thickly sliced

  • 4 cloves garlic, skin on and crushed

  • 20g green olives

  • 6 sprig oregano

  • 2 chicken breasts

  • 215g tin butter beans

  • 6 stalks cavolo nero

Method

  1. Preheat the oven to 200°C fan/220°C/gas mark 7.

  2. Place the lemon slices, garlic, olives and oregano in a roasting tin, season and drizzle with oil. Toss to combine.

  3. Bake for 10 minutes then add the chicken breasts and butter beans. Coat with the pan juices and bake for 10 minutes. Add the cavolo nero and return to the oven for a final 5 minutes until the cavolo nero is crisp and the chicken is cooked through.

  4. Serve the chicken, sliced, on top of the butter beans and cavolo nero, and drizzle with the pan juices.
