Ingredients
1/2 red onion, sliced
125g Greek yoghurt
1/4 cucumber, grated
2 cloves garlic, crushed
extra virgin olive oil
salt & pepper
250g minced lamb
1/4 tsp. ground cinnamon
1/4 tsp. ground cumin
1/4 tsp. chilli flakes
1 clove garlic, crushed
squeeze lemon juice
1/2 tbsp. light olive oil/vegetable oil
small handful coriander, finely chopped
1 tomato, sliced
1/4 cucumber, sliced diagonally
4 pitta breads
Method
Place the sliced red onion in a bowl of water and set aside. This will mellow that raw onion flavour a little.
To make the tzatziki, combine the Greek yoghurt, grated cucumber, the two cloves crushed garlic, a drizzle of extra virgin olive oil and season generously.
To make the koftas, combine the lamb mince, ground cinnamon, ground cumin, chilli flakes, 1 crushed clove of garlic and lemon juice, and shape into 4 sausage shapes.
Brush the koftas with some light olive oil/vegetable oil and cook in either a griddle pan or frying pan over a high heat or under a hot grill for 4 minutes on each side.
Warm the pitta breads, and serve the koftas in them with the tomato, cucumber and drained red onion, with a generous dollop of tzatziki.
