Ingredients
250g beef mince
3cm ginger, finely chopped/2 tsp. ginger paste
2 cloves garlic, crushed/2 tsp. garlic paste
1 spring onion, sliced, whites and greens seperated
1 apple, grated
2 tbsp. soy sauce
1.5 tbsp. sesame oil
2 tsp. brown sugar
Light olive oil/vegetable oil
160g fine green beans, trimmed and halved
160g baby corn
Rice to serve
Method
In a large bowl, combine the beef mince, ginger, garlic, spring onion whites, grated apple, soy sauce, sesame oil, brown sugar, salt and pepper and mix thoroughly.
Place a frying pan over a high heat and add a drizzle of light olive oil/vegetable oil.
Add the beef mix, green beans and baby corn to the pan, and spread the mixture out. Cook for 4 minutes without stirring.
Flip the meat and cook for 4 minutes on the other side.
Once cooked through, break the beef mince up into bitesize pieces. Check for seasoning.
Serve with some rice on the side, and top with your spring onion greens.
