Jerk chicken & mango salad

Ingredients

  • 1/4 white cabbage, shredded

  • 1 lime, juiced

  • 2 chicken breasts

  • 2 tbsp. jerk paste

  • 1/2 mango, diced

  • 1 shallot, finely chopped

  • 1 tomato, diced

  • 1/4 cucumber, seeded and diced

  • 1/2 red chilli, finely chopped

  • 2 tbsp. chopped mint

  • small handful coriander, chopped

Method

  1. Preheat the oven to 200°C fan/220°C/gas mark 7.

  2. Combine the cabbage with half the lime juice and season with salt & pepper. Set aside.

  3. Marinate the chicken breasts with the jerk paste, place on a baking tray and cook on the top shelf for 20 minutes, or until cooked through.

  4. Combine the mango, shallot, tomato, cucumber and chilli and season well. Add the cabbage and stir through the coriander.

  5. Serve the chicken, sliced, on top of the mango and cabbage and top with a squeeze of the remaining lime juice.
