Ingredients
4 sausages, meat removed from casings
4 sundried tomatoes, finely chopped
2 cloves garlic, crushed
1 tbsp. grated Parmesan
1 tbsp. toasted pine nuts
2 tbsp. basil, finely sliced
Salt & pepper
1 tsp. vegetable oil/light olive oil
1 tsp. pesto
1 tbsp. mayonnaise
1/2 ball mozzarella, sliced
2 burger buns/crusty white rolls
Tomato salad to serve
Method
Combine the sausage meat, sundried tomatoes, garlic, Parmesan, pine nuts, basil and some salt and pepper in a bowl.
With wet hands (this will stop things getting too sticky!) shape the mixture into two burger.
Heat the oil in a frying pan over a medium heat, and add the sausage burgers.
Fry for five minutes on each side until the burgers are cooked through (no longer pink in the centre middle of the burger).
While the burgers are cooking, combine the pesto with the mayonnaise.
To serve, spread half the pesto mayonnaise onto the bottom of each bun. Top with a burger, mozzarella sliced and a grind of black pepper. Great with a tomato salad on the side.
