Italian-ish deli salad

Notes

This salad has it all - it's fresh, sweet, spicy, salty, creamy. The antithesis of a boring lunch! Feel free to swap ingredients as you please, and you can easily make it veggie (remove saucisson) or vegan (remove Gorgonzola and honey too) - try adding some roasted peppers and olives.

Ingredients

  • 1 ruby gem lettuce (or just normal gem lettuce), sliced

  • 1 head chicory or radicchio, sliced

  • 4 chargrilled artichoke hearts, quartered

  • 8 sunblush tomatoes, halved

  • 50g Gorgonzola, crumbled

  • 50g saucisson, cut into small dice (salami would also work well here)

  • 2 tbsp. red wine vinegar

  • 3 tbsp. extra virgin olive oil

  • 1 clove garlic, crushed

  • 1 tsp. Dijon mustard

  • 2 tsp. honey

Method

  1. Place the lettuce, chicory/radicchio, chargrilled artichoke hearts, sunblush tomatoes, Gorgonzola and saucisson in a large bowl and toss.

  2. In a small bowl add the red wine vinegar, extra virgin olive oil, garlic, Dijon mustard, honey and season. Whisk to combine.

  3. Dress the salad with the dressing and serve.
