Honey mustard sausages with sweet potato mash

Ingredients

  • 2 tbsp. honey

  • 2 tbsp. wholegrain mustard

  • 1 red onion cut into 8 wedges

  • 4 sausages

  • 2 sweet potatoes

  • 3 tbsp. butter

  • Green veg, to serve

Method

  1. Preheat the oven to 200°C fan/220°C/gas mark 7.

  2. Combine the honey and mustard in a small bowl.

  3. Place the sausages and red onion wedges on a baking tray and drizzle with the honey & mustard and a little oil. Roast for 30 minutes, turning halfway through.

  4. Meanwhile, boil the sweet potatoes for around 15 minutes until tender, then mash with the butter and a little salt.

  5. Serve the sausages and onions with the sweet potato mash and some green veg on the side.
