Ingredients
2 tbsp. honey
2 tbsp. wholegrain mustard
1 red onion cut into 8 wedges
4 sausages
2 sweet potatoes
3 tbsp. butter
Green veg, to serve
Method
Preheat the oven to 200°C fan/220°C/gas mark 7.
Combine the honey and mustard in a small bowl.
Place the sausages and red onion wedges on a baking tray and drizzle with the honey & mustard and a little oil. Roast for 30 minutes, turning halfway through.
Meanwhile, boil the sweet potatoes for around 15 minutes until tender, then mash with the butter and a little salt.
Serve the sausages and onions with the sweet potato mash and some green veg on the side.
