Honey citrus chicken

Ingredients

  • 2 chicken breasts

  • 1 tbsp. seasoned flour

  • light olive oil/vegetable oil

  • 1 banana shallot, finely sliced

  • 1 carrot, grated or cut into matchsticks

  • 250g chicken stock

  • 1 lemon, zested and juiced

  • 1 orange, zested and juiced

  • 1 tbsp. soy sauce

  • 1 tbsp. honey

  • Rice and greens to serve

Method

  1. Place the chicken breasts between two slices of cling film and bash with a rolling pin to flatten. Dip each flattened breast in the seasoned flour to coat on each side.

  2. Heat a drizzle of oil in a large frying pan over a medium-high heat and fry for 2 minutes on each side until golden. Remove and set aside

  3. Add another drizzle of oil to the pan and add the shallot and carrot. Fry for around 5 mins until soft. Add the chicken stock, lemon and orange juice and zests, soy sauce and honey and simmer for 10 mins until thickened.

  4. Return the chicken to the pan, reduce the heat and simmer for 10-15 minutes until the chicken is cooked through and the sauce is glossy. If it gets a little too thick, you can add a splash of water. Check for seasoning.

  5. Serve the chicken with rice and green veg with the sauce spooned over.
