Ham & mushroom pasta

Ingredients

  • 140g dried pasta (conchiglie works well here, but any will do)

  • 1 onion, finely sliced

  • 80g chestnut mushrooms, sliced

  • 1 clove garlic, crushed

  • Small handful cherry tomatoes, quartered

  • 40g finely sliced smoked ham, torn

  • Small handful mature Cheddar, grated

  • 3 spring onions, finely sliced

Method

  1. Cook the pasta according to packet instructions in salted water.

  2. Meanwhile, in a large frying pan cook the onion in oil or butter until soft. Add the mushrooms and fry for a further couple of minutes then add the garlic, tomatoes and ham. Cook for a few minutes until everything us hot, then add the pasta, cheese and spring onions and mix.

  3. Serve, with a green salad on the side if you fancy.
