Ingredients
100g chorizo ring, roughly chopped
125g halloumi, sliced
4 flour tortillas
100g gherkins, finely chopped
1/2 tbsp. American mustard
2 tbsp. mayonnaise
1 large carrot, grated
1/4 red cabbage, shredded
handful coriander, finely chopped
Method
Place a dry frying pan over a medium heat and add the chorizo. Fry until the gorgeous red oil is released and the chorizo starts to become crisp.
Turn the heat up and add the halloumi slices. Fry for 3-4 minutes, not touching the pan.
Meanwhile, combine the gherkins, mustard, mayonnaise and some black pepper in a bowl and heat the wraps in a dry frying pan or the microwave.
By now, one side of the halloumi will be crisp and one will be soft, which is delicious in this wrap.
To assemble, spread a spoonful of the gherkin mayo along the length of the tortilla. Add the hot chorizo and halloumi, and top with some grated carrot, shredded cabbage and coriander. Roll up and serve!
