Greek chicken

Ingredients

  • 2 small chicken breasts

  • 4 tbsp. natural yoghurt

  • 2 tsp. dried oregano

  • 1/2 tsp. chilli flakes

  • Splash of red wine vinegar

  • Squeeze of lemon juice

  • Salt & pepper

Method

  1. Place the chicken breasts between two sheets of cling film. Using a meat hammer or rolling pin, bash the breasts until flat and an even height.

  2. Combine the yoghurt, dried oregano, chilli flakes, red wine vinegar, lemon juice and generously season.

  3. Marinade the chicken breasts in the yoghurt mix and chill for as long as you have up to 24 hours.

  4. You can fry, griddle, grill or barbecue the chicken, generally for around three minutes per side.
