Wonderfully easy and packed with delicious flavour.
Ingredients
150g dried penne/fusilli
2 tbsp. butter
1 tbsp. balsamic vinegar
a small handful basil, torn
300g mixed cherry tomatoes, quartered
1/2 ball mozzarella
extra virgin olive oil
Salt & pepper
Method
Bring a pan of water to the boil, add some salt and the pasta, and cook according to packet instructions (usually 11-14 minutes).
When the pasta is cooked, reserve a cup of the cooking water and drain, returning to the pan.
Put the pan back on a low heat and add the butter, balsamic vinegar, basil and tomatoes. You may want to add 1-2 tbsp. of the pasta water to encourage the butter to melt. Check for seasoning.
After a minute or so, add the basil, tear in the mozzarella and serve, with a drizzle of extra virgin olive oil and fresh black pepper.
