Dan dan noodles

Ingredients

  • 4 pork sausages

  • 1/2 tsp. Chinese five-spice

  • 1 pak choi, leaves left whole and white stalks sliced

  • 1 spring onion, finely sliced

  • 1 tbsp. tahini

  • 1 tbsp. soy sauce

  • 2 tbsp. sweet chilli sauce

  • 1x 300g pack straight-to-wok udon noodles

Method

  1. Heat some oil in a frying pan over a high heat. Squeeze the sausages out of their skins and add the met to the pan. Add the Chinese five-spice and a little seasoning and fry for 5 minutes, stirring occasionally to break up the meat.

  2. To make the Dan dan sauce, combine the tahini, soy sauce, sweet chilli sauce and 1 tbsp. hot water with a fork.

  3. Once the sausage meat is crispy, add the noodles and pak choi stalks to the pan. Stir-fry for around a minute then add the sauce and pak choi leaves. Fry for a further minute, then top with the sliced spring onions and serve.
