Notes
This is delicious both hot or cold. If serving cold as a pasta salad, chill and only add the rocket when ready to serve.
Ingredients
150g pasta (spirali or fusilli are lovely here)
100g green beans
3 tbsp. pesto
150g creme fraiche
100g cooked king prawns
1/2 lemon, zested and juiced
25g toasted pine nuts
handful rocket
Method
Cooked the pasta in salted water, according to pack instructions. Add the green beans for the last two minutes. Keep a cup of the pasta water before draining.
Return the pasta and beans to the fry pan, and add the pesto, creme fraiche, prawns, lemon zest and juice and season well.
If the sauce is a little thick, add a splash of the pasta water you kept.
Stir through the rocket, check for seasoning and serve.
