Coronation chicken salad

Notes

Naan croutons add a lovely crunchy, chewy texture to this delicious classic.

Ingredients

  • 1 naan bread

  • 1 cooked chicken breast

  • 2 1/2 tbsp. mayonnaise

  • 1 tsp. curry powder

  • 40g baby spinach

  • 1/4 cucumber, seeds remove and sliced

  • 50g cherry tomatoes, halved

  • 1/2 lemon, juiced

  • 2 tsp. mango chutney

  • 1.5 tbsp. olive oil

  • 1 tbsp. toasted flaked almonds

Method

  1. Grill or toast the naan bread, and tear into crouton size chunks.

  2. Combine the chicken, mayonnaise, curry powder, salt & pepper.

  3. In a separate bowl, mix together the spinach, cucumber and cherry tomatoes.

  4. For the dressing, combine the lemon juice, mango chutney, olive oil and a pinch of salt. Add half of the dressing to the spinach salad.

  5. Serve the chicken mix on top of the salad, topped the the naan croutons, the remaining dressing and the toasted flaked almonds.
