Coconut water rice

Notes

Thai-inspired, a much lighter version of coconut rice.

Ingredients

  • 300g long grain rice

  • 300ml coconut water

  • 300ml cold water

  • 2 tbsp. fish sauce

  • 1 tsp. caster sugar

  • Black pepper

Method

  1. Place the rice in a saucepan and cover with the coconut water, cold water, fish sauce, caster sugar and a good few grinds of black pepper.

  2. Bring to a simmer, put a lid on the saucepan, lower the heat right down and cook for 10 minutes.

  3. Check the rice for seasoning, adding a little salt if needed, and replace the lid and leave for another 10 minutes - the rice will stay warm.
