Ingredients
1 red onion, sliced
100g chorizo, diced
Pinch sugar
300g sweet potato, diced
1 green pepper, sliced
2 cloves garlic, sliced
120g couscous
1 chicken stock cube
1 tbsp. chipotle paste
Method
Heat a drizzle of oil in a frying pan and add the red onion, chorizo and a pinch of sugar and fry for 5 minutes until the chorizo is crisp and the onion has softened.
Add the sweet potato and cook for a further 5 minutes before adding the pepper and garlic. Cook for 5 minutes more.
Meanwhile, place the couscous in a bowl and add 200ml boiled water. Cover with a clean tea towel and set aside for 10 minutes.
Dissolve the stock cube in 350ml boiling water and add the chipotle paste. Combine.
Add the chipotle stock to the pan and cook for 10 minutes until the sweet potato is tender. Fluff the couscous with a fork. Check the chorizo mixture for seasoning,.
Serve the chorizo mixture on top of the couscous.
