Chinese pork & sweet potato traybake

Ingredients

  • 2 sweet potatoes, diced

  • 2 cloves garlic, crushed

  • 5cm ginger, minced

  • Sesame oil

  • 2 pork chops

  • 2 tsp. Chinese five-spice

  • 3 spring onions, finely sliced

  • Drizzle soy sauce

Method

  1. Preheat the oven to 200°C fan/220°C/gas mark 7.

  2. Place the sweet potato pieces in a roasting tray and add the garlic, ginger, a drizzle of sesame oil and sprinkling of salt. Roast for 20 minutes.

  3. While the sweet potato's cooking, coat the pork chops in the Chinese five-spice, some sesame oil and a sprinkling of salt.

  4. Once the sweet potato has roasted for 20 minutes, top with the pork chops. Turn the oven down to 180°C fan/200°C/gas mark 6 and return to the oven to 20 minutes further.

  5. To serve, top with the spring onions and a drizzle of soy sauce.
