Ingredients
2 sweet potatoes, diced
2 cloves garlic, crushed
5cm ginger, minced
Sesame oil
2 pork chops
2 tsp. Chinese five-spice
3 spring onions, finely sliced
Drizzle soy sauce
Method
Preheat the oven to 200°C fan/220°C/gas mark 7.
Place the sweet potato pieces in a roasting tray and add the garlic, ginger, a drizzle of sesame oil and sprinkling of salt. Roast for 20 minutes.
While the sweet potato's cooking, coat the pork chops in the Chinese five-spice, some sesame oil and a sprinkling of salt.
Once the sweet potato has roasted for 20 minutes, top with the pork chops. Turn the oven down to 180°C fan/200°C/gas mark 6 and return to the oven to 20 minutes further.
To serve, top with the spring onions and a drizzle of soy sauce.
