Ingredients

  • 250g beef mince

  • 1 onion, chopped

  • 2 cloves garlic, crushed

  • 1 tsp. chilli flakes

  • 2 tsp. dried oregano

  • 1 tsp. ground cumin

  • 2 tbsp. tomato puree

  • 250ml passata/chopped tomatoes

  • 1 tbsp. pickled jalapeños, chopped

  • 150ml chicken stock

  • 400g black beans

  • grated Cheddar, soured cream, guacamole and tortilla chips to serve

Method

  1. Place a deep frying pan over a medium-high heat and fry the beef mince until brown.

  2. Add the onions and cook until soft, then add the garlic, chilli flakes, dried oregano, ground cumin and fry for a few minutes.

  3. Add passata/chopped tomatoes, tomato puree, picked jalapeños and chicken stock and simmer for 30 minutes.

  4. Add the drained black beans and simmer for a further 15 minutes.

  5. Serve in a bowl with Cheddar, soured cream, guacamole and tortilla chips, or rice if you prefer.
