Ingredients
250g beef mince
1 onion, chopped
2 cloves garlic, crushed
1 tsp. chilli flakes
2 tsp. dried oregano
1 tsp. ground cumin
2 tbsp. tomato puree
250ml passata/chopped tomatoes
1 tbsp. pickled jalapeños, chopped
150ml chicken stock
400g black beans
grated Cheddar, soured cream, guacamole and tortilla chips to serve
Method
Place a deep frying pan over a medium-high heat and fry the beef mince until brown.
Add the onions and cook until soft, then add the garlic, chilli flakes, dried oregano, ground cumin and fry for a few minutes.
Add passata/chopped tomatoes, tomato puree, picked jalapeños and chicken stock and simmer for 30 minutes.
Add the drained black beans and simmer for a further 15 minutes.
Serve in a bowl with Cheddar, soured cream, guacamole and tortilla chips, or rice if you prefer.
