Ingredients
Vegetable oil, for frying
1 onion, finely sliced
2 tsp. garam masala
1/2 tsp. chilli flakes
1/2 tsp. ground turmeric
300g cooked chicken/turkey
250g pouch cooked basmati rice
150g baby spinach
3 tbsp. natural yoghurt
Small handful coriander, finely chopped
Method
Heat a drizzle of oil in a frying pan over a medium heat and add the onion. Cook for 10 minutes until soft. Add the spices and cook for a minutes or two, until fragrant.
Add the cooked chicken and rice and stir until heated through - roughly 5 minutes. Add a little water if starting to stick.
Stir through the spinach
until wilted and season well.
Serve, topped with dollops of
natural yoghurt, a little sprinkling of garam masala and the coriander.
