Chicken & spinach pilaf

Ingredients

  • Vegetable oil, for frying

  • 1 onion, finely sliced

  • 2 tsp. garam masala

  • 1/2 tsp. chilli flakes

  • 1/2 tsp. ground turmeric

  • 300g cooked chicken/turkey

  • 250g pouch cooked basmati rice

  • 150g baby spinach

  • 3 tbsp. natural yoghurt

  • Small handful coriander, finely chopped

Method

  1. Heat a drizzle of oil in a frying pan over a medium heat and add the onion. Cook for 10 minutes until soft. Add the spices and cook for a minutes or two, until fragrant.

  2. Add the cooked chicken and rice and stir until heated through - roughly 5 minutes. Add a little water if starting to stick.

  3. Stir through the spinach

    until wilted and season well.

  4. Serve, topped with dollops of

    natural yoghurt, a little sprinkling of garam masala and the coriander.
