Ingredients
1/2 onion, finely chopped
2 cloves garlic, crushed
2 sprigs thyme
2 tsp. smoked paprika
250g mushrooms, roughly chopped
1 vegetable stock cube
2 chicken breasts, cut intro strips
3 tbsp. soured cream
Rice, mashed potato or pasta to serve
Method
Heat a drizzle of oil in a saucepan over a low heat. Add the onions and stir often for around 8 minutes until soft. Add the garlic, thyme and paprika and stir for a further minutes.
Add the mushrooms, vegetable stock cube, 400ml just boiled water and the chicken. Bring to the boil and then summer for 20 minutes, stirring often. Check the chicken is cooked through, and stir through the soured cream.
Bring the heat back up and summer for a further 5-10 minutes until the sauce is nice and thick. Remove the thyme sprigs and serve.
