Ingredients
1/2 onion, finely chopped
2 cloves garlic, sliced
1 sprig rosemary
50g chorizo, chopped
1/2 tin chickpeas, drained
400g chopped tomatoes
Handful black olives
4 chicken thigh fillets
Salt & pepper
Drizzle light olive oil
Method
Preheat the oven to 180°C fan/200°C/gas mark 6.
Place the onion, garlic, rosemary, chorizo, chickpeas, black olives and chopped tomatoes in a roasting tin. Season well and mix together. Top with the chicken thigh fillets, drizzle with a little olive oil and drizzle with salt.
Roast for 40 minutes until the sauce has reduced and the chicken is cooked and golden. Check the sauce for seasoning, and serve with some crusty bread on the side, if you fancy.
