Cajun-style dirty rice

Ingredients

  • 100g basmati rice

  • 1 bay leaf

  • 1 chicken stock cube

  • 1 beef stock cube

  • light olive oil/vegetable oil

  • 1 small onion, diced

  • 2 rashers smoked streaky bacon, finely sliced

  • 250g minced beef

  • 1/2 tsp. smoked paprika

  • 1/2 tsp. dried oregano

  • pinch chilli flakes

  • dash Worcestershire sauce

  • 1 green pepper, diced

  • 1 carrot, diced

  • 4 mushrooms, quartered

  • 1/2 bunch spring onions, sliced

Method

  1. Cook the rice according to packet instructions, adding a bay leaf and chicken stock cube to the water. Set aside.

  2. Add the beef stock cube to 150ml boiling water and set aside.

  3. Add a drizzle of oil to a large frying pan over a medium heat and add the onion. Cook until soft, and add the bacon. Cook until the fat renders and the bacon starts to crisp. Add the beef mince and fry until brown.

  4. Add the smoked paprika, dried oregano, chilli flakes and Worcestershire sauce and stir through.

  5. Add the green pepper, carrot, mushrooms and beef stock and cook until the veg starts to soften.

  6. Add the cooked rice (discarding the bay leaf) and spring onion and stir until thoroughly combined.

  7. Check for seasoning and serve.
