Cajun chicken burger

You can buy Cajun seasoning, but making it yourself is cheaper, more satisfying and even more delicious!

Ingredients

  • 2 chicken thigh fillets

  • 1 tbsp. ground cumin

  • 1 tbsp. smoked paprika

  • 2 tsp. dried oregano

  • 1 tsp. light brown sugar/golden caster sugar

  • pinch of salt

  • 1 tsp. vegetable oil/light olive oil

  • 2 burger bun (brioche buns are nice here)

  • 4 tbsp. coleslaw

  • Sweet potato wedges, potato salad, fried or a side salad to serve

Method

  1. Place the chicken thigh fillets between two sheets of cling film and using a meat hammer or rolling pin, give them a good bash until they are equal in thickness. They should almost double in size.

  2. Combine the ground cumin, smoked paprika, dried oregano, sugar and salt on a plate or in a dish that can fit your chicken thighs and cover them with the spice rub. You can leave them up to overnight, but they will be delicious if you cook them straight away too.

  3. Heat the oil in a frying pan over a medium-high heat, and add the chicken thighs. Cook for around three minutes on each side. They will char, but this is exactly what you want for that delicious Cajun flavour.

  4. Meanwhile, spread the base of your buns with some coleslaw.

  5. Check that the juices are running clear in your chicken and add to the buns, pouring over any juices that are left in the pan.
