Beef meatballs with smoky tomato and spinach sauce and couscous

Ingredients

  • 250g minced beef

  • 1 clove garlic, crushed


  • Handful parsley, chopped

  • Drizzle light olive oil

  • 1 small onion, finely chopped

  • 1 tsp. smoked paprika

  • 400g chopped tomatoes

  • 160g frozen spinach

  • 175g couscous

  • 225ml boiling water

  • Small handful basil, chopped

Method

  1. Combine the minced beef, garlic and 1/2 tbsp. chopped parsley and lots of seasoning. Shape into 10 meatballs.

  2. Heat a drizzle of olive oil in a frying pan and fry the meatballs, turning often until brown all over. Remove from the pan and set aside.

  3. Add a little more oil to the pan if needed, and add the onion and fry for 5 minutes until soft. Stir in the smoked paprika and cook for a few more minutes. Add the chopped tomatoes, spinach and meatballs, season well and simmer for 10 minutes.

  4. Meanwhile, place the couscous in a bowl and pour over the boiling water. Add the remaining parsley, season well and cover with cling film and leave for 5 minutes, or until the water has been absorbed.

  5. Stir the meatballs, adding a little water if needed, and check for seasoning. Stir through the basil.

  6. Fluff the couscous, drizzle over a little oil and serve it alongside the meatballs.
