Bacon & courgette tagliatelle

Ingredients

  • 100g smoked bacon lardons

  • 1 courgette, grated

  • 1 clove garlic, crushed

  • 150g dried tagliatelle

  • 1 tbsp. capers

  • 1/2 lemon, zested and juiced

  • 2 handfuls rocket

  • Parmesan to serve

Method

  1. Place the lardons in a frying pan over a medium heat and fry for 5 minutes until crisp and golden. Remove from the pan and set aside.

  2. Add the grated courgette and garlic to the pan and fry for 6-8 minutes until most of the water has evaporated. Add the tagliatelle and 400ml boiling water and stir until the tagliatelle nests start to unravel. Simmer for around 9 minutes, stirring occasionally until the pasta is al dente.

  3. Stir through the capers, lemon zest and juice and bacon lardons, adding a little more water if it's a bit dry.

  4. Fold the rocket through, serve in pasta bowls and top with Parmesan, if you like.
