Ingredients
100g smoked bacon lardons
1 courgette, grated
1 clove garlic, crushed
150g dried tagliatelle
1 tbsp. capers
1/2 lemon, zested and juiced
2 handfuls rocket
Parmesan to serve
Method
Place the lardons in a frying pan over a medium heat and fry for 5 minutes until crisp and golden. Remove from the pan and set aside.
Add the grated courgette and garlic to the pan and fry for 6-8 minutes until most of the water has evaporated. Add the tagliatelle and 400ml boiling water and stir until the tagliatelle nests start to unravel. Simmer for around 9 minutes, stirring occasionally until the pasta is al dente.
Stir through the capers, lemon zest and juice and bacon lardons, adding a little more water if it's a bit dry.
Fold the rocket through, serve in pasta bowls and top with Parmesan, if you like.
