Oyster sauce
A great sauce to have to hand when you next fancy a stir fry.
Oyster sauce is a syrupy, dark condiment made from oyster extract, sugar, salt and water thickened with cornflour. It is found in Vietnamese, Thai and Chinese cuisines. It is umami-rich and adds a savouriness to dishes.
It is used in stir fry sauces, dipping sauces and sometimes to top dishes.
